I wonder how much of Castela’s human physical behaviour and reactions are the result of her biology or if it’s only emulated biological functions. Castela has human genes but isn’t actually physically human. She’s a bundle of branches and vines shaped like a human. She doesn’t have any of the human organs that would be affected by ethanol in the first place.
So the question would be if all her “human” reactions are only emulations. In other words, is she only drunk because her human form thinks she should be drunk?
She’s a human-plant hybrid, not a plant emulating a human. Her reactions are genuine, but probably shouldn’t always conform exactly to how a human’s nor a plant’s should.
Most of your first paragraph is incorrect. She is a half human hybrid, right down to her DNA. Her body is real, not an affectation.

Isn’t her body still made of bunched up brambles and vines though? IIRC, when she was young, she could unravel merely by tripping and liked to sleep in a pot so it would contain her if she unraveled in her sleep.
Imagine if all that foliage she’s been vomiting was viable plant tissue, and once flushed through the system would float around the oceans until it found purchase on far flung shores, at which point it started to grow and spread. The Blackthorn could play the long game just by nudging her into requent intoxication!
