Um, Castela does realize that, to the best of my knowledge, she gets to choose how her human form looks? Why would she be getting jealous over body appearance issues?
Everyone’s different. I started ogling girls early, no more than 5 or 6 years old. Had a secret stash of porn I’d gathered at 9. First roll in the bunk with a girl at 10 or 11… Other than that I’d say my childhood was pretty normal.
It’s been established that Castela has ancestry from both the plant and animal kingdoms. It’s entirely possible that the animal portion of her DNA results in there being one particular human shape that she can most naturally and easily assume the form of, and that shape is growing up as a humanoid would. Yeah, she could make herself look different, but it would take more concentration and effort than this form does, so why keep it up 24/7?
Pickle doesn’t bother making her eyes look human while she’s with family or the other Paras. Are eyes hard to fake? Maybe she’ll be wearing sunglasses in public.

It WAS a three year timeskip. At the end of this timeskip – over the space of a few days – Castela hit puberty – thus, sudden growth spurt. Simple.
